**Key Responsibilities**:
- Develop and execute a new menu focusing on nixtamalized heirloom corn antojitos combined with PNW ingredients.
- Collaborate closely with local farmers and suppliers to source sustainable, seasonal ingredients.
- Create and test recipes that highlight the distinct flavors of heirloom corn and Mexican spices, blending them with unique PNW elements.
- Oversee food preparation, ensuring every dish is of high quality and consistently delicious.
- Train and mentor kitchen staff on new techniques and menu items, fostering a kitchen environment centered around respect, creativity, and collaboration.
- Maintain kitchen operations, including inventory management, ingredient sourcing, and waste reduction.

**Qualifications**:
- Proven experience as a Chef, preferably with a focus on Mexican cuisine and regional sourcing.
- Expertise in traditional Mexican cooking techniques, especially nixtamalization and masa preparation.
- Knowledge of Pacific Northwest ingredients and culinary trends.
- Strong leadership skills with the ability to inspire and teach a diverse kitchen team.
